If I want to use my custom domain with this service, what IP Address or CNAME would I use to point to this server.

If you wish to set your DNS to point to x10hosting's name servers, they are

ns1.x10hosting.com
ns2.x10hosting.com

If you wish to keep the nameservers somewhere else, the IP address for your server starka.x10hosting.com is currently

69.175.120.122

How would I go about using the NS Records for this server, but using my own Mail Server. Would I just remove the current MX record and add my own in cPanel X?

Yup. Many people use Google Apps for email for their accounts and do that.
