I think you're asking about changing what-you-see-is-what-you-get programming to pure coding (and if you are, this is the wrong section to post this in). There are programs that come with your operating system like Notepad.exe (I don't know the Mac equivalent) that only edits the text, and will allow you to edit the HTML code directly with no additional formatting from the word processor.
